In my knowledge there is two main reason behind using the SAN over LAN is :
1. Speed 2. Security
As in SAN network the fiber channel is used that provided the highest speed for data travel. Dedicated network provide the more security then LAN due to low data traffic.
One more advantage of having SAN is the 'Redundancy'. If one path fails, other path is there for taking over the load. Of course this is valid if you have 2 Fabric switches with 2 Storage Processing Arrays and if you have multi-pathing package installed. Hope I am correct.
